What this video is about
In this short excerpt from a conversation, a professional from the world of gastronomy describes how he experiences the stress associated with his work. He explains that the combination of context, pressure, urgency and the pursuit of excellence generates a very high level of stress, especially during several consecutive hours of maximum intensity. As an example, he says that at such moments his watch has recorded a heart rate of 180 beats per minute.
In the face of these demands, he highlights two things. On the one hand, the need to stay very focused and concentrated. On the other, the importance of the team supporting him and believing in what he proposes. He sums up this idea with the phrase “if one of us fails, we have all failed” and highlights camaraderie as one of his team’s mottos: without camaraderie and without respect, he says, you get nowhere. The excerpt illustrates the relationship between professional demands, stress and teamwork in a high-pressure environment.
